Steps to make 戚风蛋糕

  • 1.蛋白蛋黄分离,(用无水无油的干净容器,不能有丝毫的蛋黄滴落混入蛋白中)
  • 2.蛋白放冰箱冷藏,蛋黄加入24克细砂糖搅拌糖完全融化再加入32克色拉油再次搅拌均匀
  • 3.倒入牛奶搅拌均匀
  • 4.筛入混合好的低粉和玉米淀粉
  • 5.搅拌成无粉状颗粒的蛋黄糊
  • 6.蛋白滴几滴白醋分三次加入粗砂糖打发
  • 7.打发至打蛋头提起有坚挺的小尖即可
  • 8.分三分之一的蛋白到蛋黄糊中翻拌均匀
  • 9.将翻拌好的蛋黄糊倒回蛋白中
  • 10.翻拌均匀
  • 11.倒入模具震出气泡,预热好烤箱放入中下层上下火135度烤50分钟
  • 12.出炉以40厘米的高度平摔出热气倒扣放凉
  • 13.放凉的戚风没有塌陷,几乎与模具持平
  • 14.徒手脱模(可以参考相关的徒手脱模视频)
  • 15.侧面干净无掉渣,这就是徒手脱模的好处
  • 16.切开里面基本没有过大的气孔,还算满意
