卤肉肠粉
最近肠粉吃上瘾了,刚好炖了一锅卤肉,切成小丁洒在肠粉上,北方人爱吃的卤肉搭配南方人爱吃的肠粉,不要太好吃啊,不要太好吃,因为太好吃了,我就抢不上哇,做肠粉的速度赶不上吃的速度。。。

  • 清水250克
  • 小葱一棵
  • 卤肉100克
  • 葱花少许
  • 少许
  • 肠粉专用酱油25毫升
  • 植物油少许
  • 少许
  • 蚝油一小勺

Steps to make 卤肉肠粉

  • 1.备齐材料,卤肉切丁,小葱洗净切葱花
  • 2.100克肠粉专用粉用250克清水调匀
  • 3.不锈钢盘子用硅胶刷,刷上一点点玉米油,一定不要多,盘子上油多了,面糊会跑向一边
  • 4.每次舀粉水之前,粉水都有先搅匀一下,避免粉沉底,舀一勺粉水倒在盘子中,一勺粉水约35~40克,这个分量刚刚好,太多了肠粉太厚影响口感
  • 5.锅中放水大火烧开,盘子左右晃一下,让面糊尽力铺满盘子,盘子放入锅中,我放的也不平,有点斜;锅里没有篦子,这个盘子刚好卡在锅里,炒锅直径差不多32cm
  • 6.撒上卤肉丁、葱花
  • 7.盖上锅盖,大火蒸1~2分钟,开盖后看到面糊鼓起大泡,说明蒸熟了,用夹子取出盘子
  • 8.用刮板从二边顺着盘子底部向里刮起肠粉即可,儿子就在旁边等着,铲出一条肠粉,立刻就吃掉,趁热吃特别软,口感特好,吃的速度比做的速度快
  • 9.依次做好全部肠粉,摆放盘中即可上桌
  • 10.吃肠粉少不了酱汁,准备一点葱姜、肠粉专用酱油25毫升,白糖少许,蚝油一小勺,清水100毫升,植物油适量;把酱油、清水、白糖、蚝油调匀在碗中待用
  • 11.锅中放入植物油,放入葱姜小火炸出香味,放入调匀的料汁烧开即可;若不想这样处理,最简单的办法,酱油、糖、香油调匀了即可;
  • 12.浇上料汁吃卤肉肠粉,味道棒棒哒;
