  • 牛奶210g
  • 玉米油25g
  • 糖粉30g
  • 炼乳适量(拌紫薯馅)
  • 糕粉适量(熟糯米粉)

Steps to make 冰皮月饼

  • 1.称量准备好所需食材
  • 2.粉类材料混合过筛
  • 3.牛奶和玉米油混合
  • 4.把过筛后的粉类放到液体中,搅拌成无颗粒糊状
  • 5.盖保鲜膜上锅蒸15分钟至全部凝固
  • 6.搅拌均匀
  • 7.稍冷却后揉成光滑的面团,盖保鲜膜备用
  • 8.紫薯蒸熟压成泥,加炼乳搅拌均匀
  • 9.紫薯搓成25g一个的小球
  • 10.红豆沙也做成25g一个的小球
  • 11.冰皮面团分成25g一个小团
  • 12.取冰皮面团小部分分别添加紫薯泥和可可粉揉匀
  • 13.取一个冰皮面团揉圆压扁,放入紫薯馅后用虎口朝上收起,最后收圆
  • 14.全部做好的红豆沙馅月饼胚
  • 15.紫薯馅冰皮月饼胚
  • 16.先用7克左右的紫薯面团压在模具顶部
  • 17.再放入包好的紫薯冰皮月饼,用手轻轻压几下。
  • 18.按压后脱模。同样做好豆沙馅的冰皮月饼
  • 19.少油不腻,清清爽爽的冰皮月饼
  • 20.口感酥软滑爽,略有弹性,色彩洁白如雪
