金丝绣球(土豆丝红萝卜肉丸)
最近这几天还在为宴客的事“伤神”, 到底要做些什么菜才合适呢? 想起来了传统团圆菜,肉丸子。不过现在人吃的比较讲究,太荤了吃的不健康, 如果适量加入蔬菜又不影响它的口感, 那是最好。 于是我加入了很多人不太爱吃胡萝卜,胡萝卜素是脂溶性物质,加入肉馅中, 不仅颜色好看, 更丰富了营养; 再经过油炸,胡萝卜素才能被人体所吸收。

虽然是这样,但还是不能直接端上桌了,当然要来点小小创意。借鉴了满汉全席中龙凤绣球的做法,帮它披件漂亮的“金色外衣”, 用切的细致、均匀的土豆丝,油炸至金黄色后, 再来中西结合, 用西式调味料沙拉酱来包裹住肉丸子,这样就很容易的穿上“土豪装”了。

这制作好的“土豆丝红萝卜肉丸”,外酥里脆,鲜嫩可口,味道新奇,造型别致,取名“金丝绣球”灰常形象,无论是在口感,视觉以及营养上来说,都是无与伦比的,是不是很好的宴客菜呢?

Steps to make 金丝绣球(土豆丝红萝卜肉丸)

  • 1.将红萝卜和姜片一起放入搅拌机中,搅碎成泥;
  • 2. 将红萝卜泥放入肉馅中,加入适量的盐、五香粉、胡椒粉等调味料;
  • 3. 顺着一个方向搅拌上劲, 准备好肉馅备用;
  • 4. 将土豆擦成细丝, 泡在水里;
  • 5.准备一个小勺, 并将勺放入油锅中再拿出;
  • 6.左手抓住肉馅, 团团, 再用虎口中挤出;
  • 7. 右手用勺舀出放入六、七成热的油锅中炸;
  • 8. 炸至成熟为金黄色后捞出沥干油分;
  • 9.土豆丝捞出控水后放入油锅中炸;
  • 10. 炸至金黄色时捞出;
  • 11. 将沙拉酱放入碗中, 再将肉丸放入其中滚一下;
  • 12. 再将滚了沙拉酱的肉丸放入土豆丝中在滚一下, 让土豆丝均匀的粘在肉丸表面;
  • 13.金丝绣球(红萝卜土豆丝丸)就完成了。
