Steps to make 泡椒鸡爪

  • 1.鸡爪收拾干净,剁成两半,再次清洗干净。
  • 2.准备焯水备用,冷水下锅,放入姜片和花椒,倒入一勺料酒。
  • 3.中火煮开,打点血沫,继续煮大概十分钟即可。
  • 4.捞出来用冷水冲洗干净,反复多冲几遍。
  • 5.然后放入冰水中,冰镇至少半小时。
  • 6.这时候准备料,把野山椒捞出一半,剁碎它。
  • 7.捞出冰镇好的鸡爪,放入剁好的野山椒,白醋,白糖,适量盐,鸡精。
  • 8.搅拌均匀,放入野山椒的水以及剩下的野山椒,尝尝味,觉得酸度和辣度都可以就行,放入密封盒,盖盖子放冰箱冷藏一夜。
