Steps to make 夏季下饭菜苦瓜炒牛肉❗️苦瓜爽脆牛肉滑嫩,小满节气美食

  • 1.准备苦瓜一个,红线椒,牛里脊肉一块,葱,蒜少许。
  • 2.牛里脊肉切片,清洗几遍去除血水挤干,肉片中加盐1克,糖2克,白胡椒粉2克,生抽2勺,料酒1勺,适量清水,朝着一个方向搅拌,让水和料汁全部吸收到牛肉片中。
  • 3.再加一勺红薯淀粉抓拌均匀,放一勺食用油混合,这样可以锁住肉片中的水分,炒出来的肉嫩。
  • 4.苦瓜切开去瓤,斜着切成片状。
  • 5.锅中放适量清水,水开后加入一勺盐和几滴油,倒入苦瓜片焯水20秒,捞出来过凉后备用。
  • 6.线椒切丁,葱蒜切块。
  • 7.锅中放适量油,油温7成热下入牛肉片滑炒熟盛出来。
  • 8.留少许底油,辣椒葱蒜炸香。
  • 9.放入苦瓜片翻炒,加盐调味。
  • 10.再加入牛肉片翻炒,出锅前加1克糖提味关火。
  • 11.苦瓜爽脆,牛肉鲜嫩,香辣开胃。
