Steps to make 蠔油狮子头

  • 1.肉糜解冻,加少许盐、白胡椒面、用手顺一方向揉搓,不时用力甩,如果有马蒂的,马蒂切小粒。
  • 2.锅放水,放葱粒、姜片、半茶匙盐、胡椒面。
  • 3.将肉糜搓成圆球,可大些、不要太小。
  • 4.水沸放肉丸,中火滚。此时会有不少泡沫,用勺子撇去。
  • 5.滚至肉丸浮起,再加少许水,再沸腾,肉丸浮起就差不多熟了,也可多滚一小会,但太长时间肉丸会有柴感。
  • 6.肉丸熟时捞起滤水。剩下的汤,最好不要倒,很清甜,可用来煮粉面等。
  • 7.将2汤匙蠔油、半茶匙生抽和老抽、糖、麻油、水淀粉放入一碗,搅拌均匀。
  • 8.兑好的汁用锅煮滚。
  • 9.倒入肉丸,用锅铲将汁浇在肉丸上,让肉丸均匀地粘上汁即可上碟。
