酸奶蔓越莓戚风蛋糕
孟老师的蓝莓奶酪戚风。有奶油奶酪的时候没想起它来,没奶酪的时候却动了心思。为这么点用量去淘奶酪有点太费精神,改编吧。把其中的奶酪和牛奶全部折算成酸奶。蓝莓干也没有,那就蔓越莓好了。今年没怎么做酸奶,临到用时就买市售品。市售酸奶比较甜,不过,反正一向都将孟老师的戚风减糖制作,酸奶的甜大概也不会让最后的蛋糕甜上多少吧?
蔓越莓有些大,切碎使用可以在蛋糕里分布得更均匀。星星点点的红宝石,镶嵌在浓香蜜甜的蛋糕中,咬出酸酸甜甜的滋味。。。。

  • 酸奶50克
  • 细砂糖40克
  • 蛋黄32克
  • 玉米油17克
  • 低筋粉45克
  • 泡打粉1/2小勺
  • 蛋白67克
  • 塔塔粉1/8小勺
  • 蔓越莓干25克

Steps to make 酸奶蔓越莓戚风蛋糕

  • 1.用料
  • 2.蔓越莓切碎,备用
  • 3.蛋黄加15克细砂糖,搅打均匀
  • 4.加入酸奶,搅拌均匀
  • 5.倒入玉米油
  • 6.搅拌均匀
  • 7.泡打粉与面粉混合,筛入蛋黄液中
  • 8.以不规则方向,搅拌均匀
  • 9.塔塔粉与剩下的糖混合,备用
  • 10.蛋白搅打成粗泡,分三次加入塔塔粉与糖的混合物搅打
  • 11.成为带小弯勾的9分发状态
  • 12.取三分之一蛋白到蛋黄糊中
  • 13.稍微翻拌
  • 14.加入剩下的蛋白,轻轻拌匀
  • 15.倒入蔓越莓
  • 16.翻拌均匀
  • 17.倒入6寸活底圆模中
  • 18.磕出大泡,震平表面
  • 19.放入烤箱,中下层,上下火140度,烤约40分钟
  • 20.出炉后立即倒扣
  • 21.彻底冷却后翻面
  • 22.脱模
  • 23.切块
