Steps to make 卤猪耳

  • 1.买来的猪耳反复洗干净,锅中水烧开放入猪耳、料酒、姜片、元葱片(没有大葱了)焯水至断生即可)。
  • 2.锅中放适量食用油,八角、花椒、香叶、干辣椒炒香。
  • 3.加入开水,加入焯熟的猪耳生抽、红烧酱油、红曲米、适量冰糖、盐烧开。
  • 4.随着卤制猪耳已上色至红润颜色,特别漂亮,猪耳软硬适度的状态。
  • 5.将猪耳取出,片去比较厚的部位并切成小块,将两耳尖重叠放上切小块的耳根肉,菜板我先铺了一层薄膜,然后用膜将其卷起卷紧。
  • 6.卷完之后防止松散,我又套了一套煮肉网,冷藏至凉透即可。
  • 7.卤猪耳颜色红润,取出切片就可以了。
  • 8.将切好的卤猪耳摆盘,明天买的鲜花折1枝花点缀一下好漂亮!卤猪耳鲜香不膩,可补充人体所需的胶原蛋白。
