西北刮来的风————凉皮
第一次吃凉皮大概15年前,从此就迷上了这个,后来到上海就吃不到哪个味道,基本都按上海人的口感做了些改良,再后来就到网上找做法,自己摸索,最后要吃凉皮的时候全是自己做的了

Steps to make 西北刮来的风————凉皮

  • 1.准备好原料。
  • 2.面粉加水揉成光滑的面团醒半小时左右。
  • 3.加水并且不断的抓揉面团,直到面团中的淀粉全部洗出。
  • 4.洗出来的一块面筋加点发酵粉揉匀发几个小时蒸熟待用。
  • 5.洗出的淀粉水再沉淀几小时,把上面的一层清水全部滗掉,剩下的再搅拌均匀。
  • 6.再一个平盘里刷上一层油。
  • 7.铺上一层面桨,开水锅里蒸1分钟左右,(中间鼓起个大的泡泡就可以)。
  • 8.拿出再放凉水盆里,过两分钟开始凉了揭开铺盘子里就可以。
  • 9.花椒八角加水烧开,加盐调味,蒜头剁碎,加凉开水,盐调匀,黄瓜切丝,面筋蒸熟切小块。
  • 10.做好的皮子切条,加黄瓜丝,面筋块,花椒水,蒜末水,盐,鸡精,辣酱油,熟芝麻。麻油。
  • 11.拌匀就可以
