汤种豆渣餐包

  • 低筋面粉60克
  • 奶粉20克

  • 红豆薏米枸杞豆浆渣70克
  • 蛋液30克
  • 汤种84克
  • 蜜豆40克
  • 酵母5克
  • 40克
  • 1/2小勺
  • 黄油20克

Steps to make 汤种豆渣餐包

  • 1.面包桶放入蛋液、牛奶、豆渣及汤种。
  • 2.在面包桶两个对角分别放入糖及盐。
  • 3.倒入粉类。
  • 4.加入酵母粉。
  • 5.启动柏翠面包机程序8,发面团程序搅面15分钟,面团成团,关闭面包机。
  • 6.加入黄油,重新启动面包机,选择程序8,发面团程序。
  • 7.搅拌10分钟,呈图7状态,做餐包我感觉到这种程度就差不多了。
  • 8.加入蜜豆,继续搅拌5分钟。
  • 9.把面团从面包桶取出,放碗里盖上保鲜膜,在自制发酵箱,28度发酵至2.5倍大。发酵箱内放一杯温热的水,增加湿度。
  • 10.1个小时后,面团取出,手指沾些粉,插入面团,不会回缩就可以了。
  • 11.面团取出压扁排气,分成9份。
  • 12.把九份面团分别揉圆,放入烤盘中,盖上保鲜膜,室温醒发20分钟。
  • 13.烤盘放入发酵箱,进行二次发酵,温度调30度,发酵40分钟左右。
  • 14.发酵好的面团,刷上蛋液,撒上奶酥粒。
  • 15.烤箱180度,上下火,中层15分钟左右。
