简易辣椒油
我喜欢隔三岔五搞上一碗辣椒油,做凉拌菜或者酸辣粉的时候浇上几勺,香辣好吃。做法也很简单,10分钟就好。有些人喜欢熬辣椒油的时候,会先炸葱油,那样味道更浓郁。但我不喜欢,我喜欢简单一点,那样在后期拌菜时,可以随机发挥,不受约束。

  • 五香粉大半勺

Steps to make 简易辣椒油

  • 1.准备一个干净耐高温带盖的容器,先放大半勺的盐,以前放的盐有点多,结果发现好多盐没有融化,所以盐不需要太多。
  • 2.3勺熟的白芝麻。芝麻一定要熟的,这样被油一激,香味才会出来。
  • 3.3勺粗面辣椒粉。有的做法是一半粗面一半细面,我家只有粗面,我就一直用的粗面。
  • 4.大半勺的五香粉。这个增加一点辣椒油的香味,但是又不会很浓,不会影响后期做菜的各种调味。
  • 5.将各种料搅拌混匀。
  • 6.用一个小锅倒入玉米油(没有明显味道的油),小火加热到出现纹路,插一根筷子会冒小泡泡,关火,晾两分钟。
  • 7.先倒少量油到容器中,然后快速搅拌均匀。不能直接用滚烫的油,会烫焦辣椒粉的,那样会发苦。
  • 8.再开火,仍然小火,再加热两分钟,然后全倒入容器中,再快速搅拌均匀。注意安全,不要烫到自己哟。
