一夜渍酱黄瓜
马上要过年啦,除了大鱼大肉类的横菜,爽口解腻的下酒小菜也是必不可少的。这里就把我喜欢吃的酱黄瓜分享给大家,这个酱黄瓜是用的爆腌的方法,用盐爆腌杀水,然后用一夜渍的腌制方法腌制一天,即方便,有不会用太多的时间,而且爽脆利口,解腻下酒,用来招待客人也是很受欢迎的一道小菜。我一般都是晚上腌上,天热就放冰箱,现在北方冷的很,我就放厨房,第二天就可以吃啦。喜欢的亲们,过年不妨试试这道小吃哦。

Steps to make 一夜渍酱黄瓜

  • 1.黄瓜纵向切条,我一般都是一分为四,然后切成约4厘米的条,加适量盐腌制2小时左右。
  • 2.用盐杀出黄瓜里面的部分水分。
  • 3.把杀了水的黄瓜倒入网筛上,上面压一个稍微有点重量的物体,我是用的饮料瓶装了一些水。进一步压出水分。
  • 4.锅里放油,凉油放入花椒和八角,小火慢炒,炒出香味。
  • 5.再放入干辣椒炒到辣椒变色,制成料油。
  • 6.杀过水的黄瓜放入碗里,加入糖、醋。
  • 7.放入料油。
  • 8.再放入生抽和老抽。老抽要用好的,可以拌菜的那种。
  • 9.拌均匀,腌制一碗,中间要翻动几次,让其均匀入味。
  • 10.腌好的菜上桌时可以摆个好看的样子,这样待客更好看。
  • 11.成品图。
