多彩冰皮月饼
明天就是中秋节了,真的是归心似箭,特意赶做一款月饼带回老家看父母,祝愿天下儿女与父母都能阖家团圆,美满幸福快乐!

这次做了绿豆沙馅的冰皮月饼,绿豆具有清热消暑,利水解毒的作用,节日吃的油腻食物太多,那就让绿豆来帮助下祛祛体内的毒素吧。我这次增加了澄粉的比例,使冰皮看上去更加的具有透与Q感,同时添加了多色果味粉作为色素,冰皮更是显得可爱粉嫩,更能够给节日增添点气氛这款。

  • 糯米粉70克
  • 粘米粉60克
  • 澄粉100克
  • 牛奶250ml
  • 蜜桃粉、草莓粉与可可粉各适量
  • 绿豆沙约400克
  • 白糖30克
  • 玉米油20ml

Steps to make 多彩冰皮月饼

  • 1.先做绿豆沙【原料】绿豆250克、玉米油20ml、白糖50克(根据个人喜好添加)
  • 2.绿豆拣去杂质,洗干净,放入电高压锅内加水没过绿豆一手指节,同时加入白糖,一起压30分钟;
  • 3.煮熟的绿豆已完全吸干水份,直接压成泥就可以做成绿豆糕了。
  • 4.将熟绿豆分次装进保鲜袋,用擀面杖压成绿豆泥,(有搅拌机则更省时省力),可以再过一遍筛网,那样绿豆沙的口感则更细腻;
  • 5.辗压好的绿豆泥,此时可以直接当馅料,不过口感细腻感会差些;
  • 6.因为是做绿豆沙馅,为了使口感更加的细腻,故加了玉米油进行炒制,油要分次加入,每次炒至油与馅完全混合,才加入余下的。
  • 7.加了油炒好的绿豆沙,比没有加油时的更有光泽,口感也更加的细腻;
  • 8.戴上一次性手套,将绿豆沙泥分割成所需的大小份量,滚圆,绿豆沙馅就做好了。
  • 9.如果再来个造型,就变成绿豆糕了,可以直接食用
  • 10.【冰皮的制作方法】取一个干净的不锈钢盘,将所有粉类混合过筛,然后倒入牛奶,加入玉米油与白糖,并充分搅拌均匀无粉粒,成稀糊状,静置30分钟;
  • 11.将粉浆置开水锅上大火蒸30分钟至熟(时间视粉浆多少而定,可用一根筷子插进去,抽出来没有白粉浆即为熟);
  • 12.蒸好的面糊表面很有光泽的,然后用筷子将面糊使劲搅拌到顺滑,若拌不匀的,待放凉之后再充分揉和(戴上一次性手套更好操作),就成冰皮了,
  • 13.揉好的冰皮,很光滑且有弹性;
  • 14.将面团分为四粉,其中三粉分别加入适量蜜桃粉、草莓粉与可可粉,并揉匀成四色面团。
  • 15.如果不想做纯色的,将各种颜色取适量,然后混合在一起,差圆,即成了冰皮,这次用了100克的月饼模,共做了11个,皮料与馅料分别为50克:50克,没有个个都称重,就凭手感,估算的。
  • 16.取一个皮料按扁如图所示;
  • 17.包入一个绿豆沙馅料;
  • 18.双手配合从下往上推,直至 收口,滚圆,即成月饼胚因为冰皮很有弹性,比较好包的。
  • 19.月饼模用少许糕粉摇匀,然后再将多余的粉磕出来,防止月饼粘模具,将月饼胚放入模具内轻轻压实压平口;
  • 20.将模具倒放于案板上,轻轻推动手柄,月饼就脱模出来了,月饼上多余的粉可以用小刷子轻轻扫去,则更美观。
  • 21.做好的多彩月饼,放冰箱冷藏数小时口感更佳。
