酸奶蛋糕
我今天用的是柴鸡蛋,数量虽然多,个头很小,蛋液并不是特别多,为了准确,我在步骤图中详细给出了蛋白和蛋黄的重量。用那种30*30的烤盘,烤好是满满一盘还膨胀出来好多。加了酸奶,这款蛋糕非常的绵软,入口即化的感觉,特别适合老人吃,我婆婆就特别喜欢这款蛋糕。

  • 低筋粉150g
  • 黄油50g
  • 酸奶150g
  • 白糖80g
  • 柠檬汁少许

Steps to make 酸奶蛋糕

  • 1.用的柴鸡蛋,蛋黄的量是130克,先把黄油融化和蛋黄一起搅拌均匀,然后加入酸奶
  • 2.再搅拌均匀
  • 3.低筋粉提前过筛两遍,然后筛入蛋黄糊中
  • 4.翻拌均匀
  • 5.蛋白中加十几滴的柠檬汁,蛋白的量是280克
  • 6.低速搅打至起大泡加入1/3的糖
  • 7.继续搅打至泡沫更多时再加1/3的糖
  • 8.搅打至泡沫细腻时加入最后的1/3的糖
  • 9.转高速搅打,提前打蛋器有下弯的三角时,转低速搅打
  • 10.低速搅打至提起打蛋器有尖尖的直角时蛋白就打发好了
  • 11.取1/3蛋白加入蛋黄糊中
  • 12.翻拌均匀
  • 13.把拌好的糊倒入剩余的蛋白中
  • 14.依然是翻拌的手法拌均匀
  • 15.拌好的糊倒入铺了油纸的烤盘中,用力提起震一下,震出大气泡
  • 16.烤箱150度烤25--30分钟
  • 17.烤好的蛋糕
  • 18.倒扣晾凉即可切块
