春笋炒腊味
春天来了,菜市场很多新鲜的竹笋卖,俺也叫不出是啥笋,好吃就行。

一问价钱,要两块半一斤,不知别的地方是不是那么贵。一根竹笋两斤多,剥开后少了一半都不止。

家里还有很多腊肉腊肠,我喜欢用它来炒笋。腊味的香渗透到竹笋里面,非常的好吃,呵呵。

Steps to make 春笋炒腊味

  • 1.将腊味切片。
  • 2.竹笋清洗一下。
  • 3.竹笋去皮,切片,汆水,竹笋含有草酸,汆水可以去掉,减少涩味,减轻草酸的不好影响。
  • 4.起油锅,爆香姜蒜,下腊味炒至慢慢变为透明。
  • 5.下竹笋一起翻炒1分钟。
  • 6.加适量的料酒、盐、生抽调味,沿锅边溜点清水炒匀。
  • 7.好了,装盘上桌。
