瘦肉版农家炒肉
这是我记忆中,妈妈最拿手的一道菜,其实妈妈是个不太会做饭的人,唯独这道菜,每次做出来都被炒杀。已经好久没有回家了,很想家人,很想妈妈,也想念那对别人来说并不可口的饭菜。在家里我没有学过做菜,现在只能凭着印象,试做了这道“炒肉”。“炒肉”是我们家乡的叫法,其实也就是青椒炒肉片吧,不过在我印象中,它的味道可是青椒炒肉片无法媲美的,我想最重要还有一个原因,那就是妈妈用的原料,家养的猪肉,和自家种的青椒、蒜苗,还有用的粉也不同,恩,没错。

    虽然做出来的味道感觉还是没有妈妈做的好吃,不过老公还是大赞,一向不喜欢吃瘦肉的他,今天也吃了个精光,外加2碗半饭。哈哈,初步成功,下次努力!

    Steps to make 瘦肉版农家炒肉

    • 1.准备材料:瘦肉、青椒、蒜苗、小红椒。
    • 2.瘦肉切薄片(需要点刀功哦),加生抽、生粉、油、姜丝,拌匀备用;青椒切小片,蒜苗切小段,蒜头可留下来爆香用;小红椒切圈。
    • 3.油锅烧热,下入蒜头、姜丝、红椒圈爆香。
    • 4.然后下入瘦肉快速翻炒,这个步骤一定要快,火候要大,会抛锅的用抛锅动作更好,翻炒几下赶紧离火盛盘待用。
    • 5.待用的瘦肉。
    • 6.放少许油、盐,炒青椒和蒜苗。
    • 7.加入瘦肉,适量盐,快速翻炒(不要停留时间过久,以免瘦肉炒老)。
    • 8.最后加入鸡精,耗油,抖匀起锅。
