紫淮山汤圆
春节之后就迎来了中国的传统节日——元宵节,在这一天,大家都习惯吃上一碗汤圆,圆圆的汤圆象征合家团圆更美好,吃汤圆意味新的一年合家幸福、团团圆圆,所以是正月十五元宵节必备的美食。因为现在好多人崇尚健康饮食,高糖高油的食物敬而远之,所以今年就换个做法吃汤圆,吃起来更健康。无馅的汤圆搭配了紫淮山,不再单调,十分好看。紫淮山是淮山的一种,所含的花青素要远远高于普通的淮山,它含有的很多维生素和微量元素、粘液质、蛋白质、多种氨基酸、矿物元素等营养性成分,高贵的紫色令普通的食谱更添食欲。方子里的水量依糯米粉吸水性而定,冰糖量要根据个人口味增减,这糖水不是很甜的。

  • 水磨糯米粉70g

  • 冰糖20g
  • 清水400g

Steps to make 紫淮山汤圆

  • 1.紫淮山去皮,切小块,先放进水中浸泡
  • 2.锅里的400克清水烧开后,将紫淮山从水中捞起放入,煮熟
  • 3.糯米粉放入和面盆里
  • 4.倒入温水,和至柔软的面团
  • 5.分成若干小份,搓成圆形,大概有13粒小汤圆
  • 6.紫淮山煮熟后加入冰糖,继续煮至冰糖融化
  • 7.另一个煮锅里的水烧开后,放入汤圆,煮至汤圆浮起3分钟即可
  • 8.将汤圆捞起放入紫淮山糖水里
