新年快乐蛋糕卷
转眼步入2013年了,在这儿祝美食天下的朋友们元旦快乐,身体健康!在这么重要的日子里,我就做个彩绘的新年快乐蛋糕卷来表达一下吧,做这个还挺拿手的,哈哈!

Details of ingredients

  • 低筋面粉80g
  • 鸡蛋白4个
  • 鸡蛋黄3个
  • 细砂糖(蛋清打发)30g
  • 细砂糖(蛋黄糊)35g
  • 色拉油40ml
  • 60ml
  • 玉米淀粉1小勺
  • 柠檬汁2滴
  • 食用红色素1滴
  • 动物淡奶油180g
  • 白砂糖20g
  • 草莓3颗

Steps to make 新年快乐蛋糕卷

  • 1.准备材料,蛋清蛋黄分离(取4个蛋清,3个蛋黄)
  • 2.蛋黄中加入35g细砂糖,用打蛋器打至起泡
  • 3.再依次加入水、色拉油、柠檬汁搅拌均匀
  • 4.蛋黄糊中筛入低筋面粉和玉米淀粉
  • 5.用打蛋器拌成均匀的面糊
  • 6.蛋白分二次加入细砂糖30g,打至湿性发泡
  • 7.提起打蛋器呈现尖角的状态
  • 8.取三分之一打发好的蛋白,放入蛋黄糊中翻拌均匀
  • 9.再将拌好的面糊倒回剩余三分之二蛋白中
  • 10.继续翻拌成细腻糊状
  • 11.取部分面糊滴入一滴红色素拌匀
  • 12.装入裱花袋,尖角剪一小口,在铺了油纸的烤盘上描绘方格图案,放入预热好170度的烤箱1.5分钟拿出
  • 13.将原味面糊倒入烤好花纹的烤盘,用刮板抹平蛋糕糊表面
  • 14.拿起烤盘,用另一只手轻拍底部,拍出大气泡,放入预热好170°的烤箱,上下火,烤15分钟左右
  • 15.烤好的蛋糕片马上倒扣在晾架上防回缩,趁热撕去油纸,再盖回去
  • 16.等冷却无温度时再放上一张干净的油纸倒过来,蛋糕四周剥边,在2cm处划上浅浅的刀痕
  • 17.动物淡奶油加细砂糖隔冰打成奶油霜,用抹刀抹在蛋糕体上,草莓切小粒摆放在上面
  • 18.慢慢卷起来,用油纸包好放冰箱冷藏1小时定型
  • 19.可可粉加一点热水化开,用牙签在蛋糕卷上写新年快乐字样就完工了
