扁豆烧山芋
这是我们家老公很喜欢吃的素菜,我和女儿也非常喜欢,每到秋天的时候,在我家的餐桌上出镜率是比较高的。

  • 青椒五个
  • 蒜瓣四个
  • 酱油两大勺
  • 两小勺
  • 一小勺
  • 鸡精一小勺
  • 花生油一大勺

Steps to make 扁豆烧山芋

  • 1.扁豆撕去边、洗净。
  • 2.山芋刨去皮,洗净后切成滚刀块。
  • 3.青椒摘去蒂,洗净后切成块。
  • 4.蒜瓣也一起切成片。
  • 5.锅内放一大勺花生油。
  • 6.将蒜片放入爆香。
  • 7.放入扁豆煸至成透明状后放入山芋。
  • 8.将扁豆和山芋翻炒均匀后,淋上两大勺酱油。
  • 9.再放入适量的开水,以菜的高度一半为好。
  • 10.撒上两小勺糖。
  • 11.盖上锅盖烧沸后转小火焖至山芋断生。
  • 12.放入青椒翻炒均匀后再小焖一会。
  • 13.撒上一小勺盐和鸡精调味即可。
