冰皮月饼
中秋来临之际,亲手做一些冰皮月饼,带着酸酸甜味的桑梅馅,口感清爽怡人。

  • 黄油50G
  • 砂糖20G
  • 30G
  • 牛奶100G
  • 冰皮粉少许

Steps to make 冰皮月饼

  • 1.冰皮制作:1:将黄油,水,砂糖加温
  • 2.待糖和油完全溶解即可离火/
  • 3.2:加入牛奶搅拌均匀3:
  • 4.加入准备好的冰皮粉和粟粉中马上搅拌,搅拌到起筋,然后戴上手套继续揉几分钟光滑即可,放保鲜袋入冰箱冷藏2个小时以上/4:取出面团,分成20G大小,包入30G馅,裹上手粉(冰皮粉),压模即可。
  • 5.奶黄馅的制作方法:材料:蛋黄3个,砂糖50克,无盐黄油 50克,牛奶90克,澄粉40克,柠檬汁少许,朗姆酒少许1:黄油软化加糖搅大发白,
  • 6.分次加入蛋黄搅拌均匀,加入牛奶搅拌,
  • 7.加入柠檬汁和朗姆酒搅拌均匀2:这个时候会看到豆腐渣样子,没关系的,
  • 8.继续加入澄粉搅拌均匀
  • 9.入蒸锅蒸15到20分,中间每隔5分取出搅拌一次,此图为蒸了10分钟的状态
  • 10.此图为蒸了16分钟的状态,到状态凝固即可,冷掉戴上一次性手套揉均匀放冰箱冷藏备用/
  • 11.我用的是50G 模具,压的时候先裹上一层冰皮粉。
