椰丝奶黄冰皮月饼
一直都比较偏爱广式月饼,即使许多人嫌它甜腻,但我确一直对它情有独钟,虽然平时也不喜欢吃太甜的食物,广式月饼却是个特例。今年又逢中秋,做了好多广式月饼后突然想做下改变,尝试一下冰皮月饼。从网上找了冰皮方子,自己做了馅料,感觉还是挺成功的。

  • 糯米粉90克
  • 粘米粉60克
  • 澄粉45克
  • 牛奶330克
  • 糖粉60克
  • 玉米油30克
  • 黄油50克
  • 150克
  • 鸡蛋3个
  • 牛奶130克
  • 澄粉50克
  • 吉士粉30克

Steps to make 椰丝奶黄冰皮月饼

  • 1.将黄油室温软化,搅拌均匀。
  • 2.在黄油中分三次加入糖,每次加入后都要搅拌均匀。
  • 3.分三次加入鸡蛋,每次加入后都要搅拌均匀。
  • 4.加入牛奶搅拌均匀。
  • 5.加入澄粉、吉士粉和椰蓉搅拌均匀。
  • 6.上锅蒸大约25分钟左右,每隔几分钟搅拌一次,蒸至透明后晾凉揉成团备用。
  • 7.将牛奶、玉米油和糖粉混合均匀。
  • 8.将糯米粉、粘米粉和澄粉混合均匀。
  • 9.将粉类倒入牛奶液体中,搅拌均匀后静置20分钟。
  • 10.上锅大火蒸,要不停搅拌,蒸至水分收干,面团透明,取出晾凉。
  • 11.取适量面团加入吉士粉揉匀。(如果做单色月饼这步可以省略)
  • 12.取25克面团和25克馅料。
  • 13.用手将面团压成中间薄边缘厚的碗状,将馅料放在中间。
  • 14.把面团放在手中,用另一只手的虎口转圈从底部将面皮往上推,包裹住馅料封口
  • 15.取适量黄色面团压成方形,按在月饼模花片上。(做单色月饼可以省略这步)
  • 16.将白色月饼坯放入月饼模中,压出成型。
