【彩绘蛋糕系列】斜纹蛋糕卷

Steps to make 【彩绘蛋糕系列】斜纹蛋糕卷

  • 1.准备材料,蛋清蛋黄分离
  • 2.蛋黄中加入35g细砂糖用打蛋器打至起泡,再依次加入水、色拉油、白醋搅拌均匀
  • 3.蛋黄糊中筛入低筋面粉和玉米淀粉
  • 4.用电动打蛋器打一下成均匀的流线面糊
  • 5.蛋白分二次加入细砂糖30g,打至湿性发泡
  • 6.提起打蛋器呈现尖角的状态
  • 7.取三分之一打发好的蛋白,放入蛋黄糊中翻拌均匀
  • 8.再将拌好的面糊倒回剩余三分之二蛋白中,翻拌成细腻糊状
  • 9.取小份面糊加入一滴红色素拌匀装入裱花袋,尖角剪一小口
  • 10.在铺了油纸的烤盘上描绘出斜线条,放入预热好170度的烤箱1.5分钟拿出
  • 11.将原味面糊倒入烤好线条的烤盘,用刮刀抹平蛋糕糊表面
  • 12.拿起烤盘,用另一只手轻拍底部,拍出大气泡,放入预热好170°的烤箱,上下火,烤15分钟左右
  • 13.烤好的蛋糕片马上倒扣在晾架上防回缩,趁热撕去油纸,再盖回去,这样可以防止卷的时候出现裂纹
  • 14.等冷却无温度时再放上一张干净的油纸倒过来,削去蛋糕四边,以2cm的间隔在蛋糕片上划出浅浅的刀痕,用刷子在蛋糕体上刷上果酱
  • 15.用刷子在蛋糕体上刷上果酱
  • 16.慢慢卷起来
  • 17.扎好两边放冰箱冷藏1小时定型
  • 18.冰箱拿出打开
