【彩绘蛋糕系列】 唐草抹茶卷
看到很多漂亮的蛋糕卷长草了,我就做个唐草的抹茶蛋糕卷。不喜欢放色素的蛋糕,所以一般我只做抹茶和可可味的。抹茶和红豆应该是绝配吧!用上了我的自制豆沙馅!

Details of ingredients

  • 低粉80g
  • 鸡蛋4个
  • 细砂糖35g,蛋黄糊用
  • 色拉油40ml
  • 50ml
  • 抹茶粉8g
  • 香草精少量
  • 鲜奶油150ml
  • 细砂糖14g
  • 自制豆沙馅70g

Steps to make 【彩绘蛋糕系列】 唐草抹茶卷

  • 1.准备材料,蛋清蛋黄分离(取4个蛋清,3个蛋黄)
  • 2.蛋黄中加入35g细砂糖
  • 3.用打蛋器打匀
  • 4.再依次加入水、色拉油、香草精搅拌均匀
  • 5.蛋黄糊中筛入低粉
  • 6.翻拌成均匀的面糊
  • 7.蛋白分二次加入细砂糖30g,打至湿性发泡
  • 8.打发至提起打蛋器呈现尖角的状态
  • 9.取三分之一打发好的蛋白,放入蛋黄糊中翻拌均匀
  • 10.再将拌好的面糊倒回剩余三分之二蛋白中,继续翻拌成细腻糊状
  • 11.在剩余面糊中筛入抹茶粉,搅拌成均匀的抹茶面糊
  • 12.取部分面糊筛入少量低粉装入裱花袋,尖角剪一小口
  • 13.在铺了油纸的烤盘上描绘唐草图案,放入预热好170度的烤箱1.5分钟拿出
  • 14.将抹茶面糊倒入烤盘
  • 15.用力震出大气泡,放入预热好170°的烤箱,上下火,烤17分钟左右
  • 16.烤好的蛋糕片马上倒扣防回缩,趁热撕去锡纸
  • 17.再倒过来,刷上奶油霜(淡奶油加细砂糖打发至硬性发泡)
  • 18.放上自制红豆沙卷起来即可。
