炝拌青椒土豆丝
炝拌土豆丝是菜又是饭,脆嫩嫩,凉嗖嗖,若隐若无的花椒香气和辣椒香气,让人吃了一口又忍不住再吃一口,不知不觉一大盆入肚了。

饭馆的炝拌土豆丝,一般都要8块钱一盘,与其花这样,不如花8块钱买4斤大土豆,能吃好几顿。

土豆富含钾、镁等微量元素,因为其含有大量碳水化合物,所以可以代替一部分主食。但吃多容易胀肚,所以也要适量食用。

Steps to make 炝拌青椒土豆丝

  • 1.黄心土豆削皮洗净,青椒洗净。
  • 2.用擦丝器将土豆擦长丝;擦丝器一般有粗细两种刀头,用粗一点儿的口感更好。
  • 3.浸泡在凉水中10分钟。
  • 4.青椒去两端、去籽。
  • 5.切细细的丝。
  • 6.烧一锅水,水开后将沥过水的土豆丝入锅,焯煮至变色捞出。
  • 7.过凉水两遍,经过这样处理的土豆丝爽脆嫩。
  • 8.青椒丝在开水中焯烫3秒即捞出。
  • 9.同入土豆丝水盆中,控水备用。
  • 10.另起锅,小火将花椒煸炒出香味,再将干红辣椒碎煸炒至浅褐色。
  • 11.趁热泼在青椒土豆丝上,再撒适量盐、鸡粉、淋少许米醋、蚝油。
  • 12.拌匀即可食用。
  • 13.炝拌青椒土豆丝,清淡爽口开胃,可代餐当主食~
