文思豆腐羹
“文思豆腐羹”是淮扬地区的传统名菜,至今已有300年历史,此菜选料极严,刀工精细,软嫩清醇,入口即化,同时具有调理营养不良、补虚养身等功效,是老人、儿童选择的上好菜谱。

Steps to make 文思豆腐羹

  • 1.备好食材:内酯豆腐、鲜香菇、火腿肠、黄瓜、高汤
  • 2.先将火腿肠、黄瓜、香菇分别切成细丝备用
  • 3.取100克内酯豆腐放在案板上
  • 4.刀上蘸点水(防粘),先将豆腐切片,再切细丝(这步动作要轻点哈,豆腐很嫩)
  • 5.切好后放入水中划开
  • 6.再放入沸水中焯烫半分钟捞出,放入清水中泡着备用
  • 7.砂锅中到入高汤,再兑入适量清水(如果全用高汤更好)
  • 8.大火烧开后下入香菇丝,盖上锅盖,转中小火煮约10分
  • 9.汤羹离不开勾芡,这时我们来调制水淀粉,先在碗中放入15克玉米淀粉,再兑入15克清水调匀即可
  • 10.香菇煮出香味后放入火腿肠丝和豆腐丝,大火烧开
  • 11.煮至片刻下入黄瓜丝
  • 12.调入3克盐,用汤勺轻推搅拌均匀
  • 13.转小火,水淀粉再次调匀后慢慢倒入汤锅中,并用汤勺轻轻不停的搅拌,待勾完芡后大火烧开即刻关火
  • 14.最后放入鸡精调匀便可上桌啦
  • 15.味道非常鲜美哦!
