香蕉戚风蛋糕
紧锣密鼓,马不停蹄
一根香蕉一种点心。香蕉马芬之后再来个松软的戚风。手边没有现成的方子,就用孟老师的南瓜戚风改编。南瓜和苹果统统折算成香蕉,而柳橙汁就变成牛奶。孟老师的南瓜戚风就这样改头换面,成为香蕉戚风。
说来惭愧,从百香果,芒果。。。。直至香蕉,孟老师的南瓜戚风被改编了N次,却从未做过一次原版。从来都不知道孟老师的南瓜戚风究竟是个什么味道,不过。。。。香蕉戚风倒是蛮不错的。。。

  • 熟香蕉45克
  • 牛奶25克
  • 蛋黄30克
  • 玉米油22克
  • 低筋粉45克
  • 细砂糖36克
  • 蛋白70克
  • 1/8小勺
  • 泡打粉1/2小勺
  • 塔塔粉1/8小勺

Steps to make 香蕉戚风蛋糕

  • 1.用料
  • 2.香蕉去皮切段
  • 3.碾压成泥
  • 4.加入牛奶
  • 5.搅拌均匀
  • 6.蛋黄加12克糖和盐
  • 7.搅拌均匀
  • 8.加入香蕉奶糊和油
  • 9.搅拌成均匀液体
  • 10.面粉与泡打粉混合,筛入蛋黄液中
  • 11.以不规则方向拌匀
  • 12.塔塔粉倒入剩下的糖中
  • 13.拌匀备用
  • 14.蛋白搅打成粗泡,分三次加入塔塔粉与糖的混合物搅打
  • 15.成带小弯勾的9分发状态
  • 16.取三分之一蛋白,加入蛋黄糊中
  • 17.稍微拌和
  • 18.加入剩下的蛋白
  • 19.拌成均匀面糊
  • 20.倒入6寸圆模,震平表面,磕出大泡
  • 21.放入烤箱,中下层,上下火140度,烤约40分钟左右
  • 22.出炉,立即倒扣
  • 23.冷却后翻面
  • 24.脱模
  • 25.切块食用
