蓝莓椰丝蛋糕卷
很少做这么朴素的蛋糕卷,平时都是花里八哨的,做彩绘的比较花时间,还是朴素点的好,这几天下雪天也没出去买奶油,家里还有瓶蓝莓酱用上了,上面撒了把椰丝,即装饰又好吃!

  • 玉米淀粉1小勺

Steps to make 蓝莓椰丝蛋糕卷

  • 1.准备材料,蛋清蛋黄分离,蛋黄中加入35g细砂糖
  • 2.蛋黄糊中筛入低筋面粉和玉米淀粉,用打蛋器拌成均匀的面糊
  • 3.再依次加入水、色拉油、柠檬汁搅拌均匀
  • 4.蛋黄糊中筛入低筋面粉和玉米淀粉,用打蛋器拌成均匀的面糊
  • 5.蛋白分二次加入细砂糖30g,打至湿性发泡,提起打蛋器呈现尖角的状态
  • 6.取三分之一打发好的蛋白,放入蛋黄糊中翻拌均匀
  • 7.再将拌好的面糊倒回剩余三分之二蛋白中,继续翻拌成细腻糊状
  • 8.将拌好的面糊倒入烤好花纹的烤盘,用刮板抹平蛋糕糊表面,拿起烤盘,用另一只手轻拍底部,拍出大气泡,放入预热好170°的烤箱,上下火,烤15分钟左右
  • 9.烤好的蛋糕片马上倒扣在晾架上防回缩,趁热撕去油纸,再盖回去
  • 10.稍冷放上一张干净的油纸倒过来,刷上一层蓝莓果酱
  • 11.慢慢卷起来,用油纸包好放冰箱冷藏半小时定型
  • 12.在蛋糕卷表面刷上一层蓝莓酱
  • 13.撒一点椰丝
  • 14.切成段即成美味蓝莓蛋糕卷
