Steps to make 金枕蛋糕

  • 1.成品图。
  • 2.制作方法:玉米油40克,牛奶70克,搅拌糖乳化,加入85克过筛低粉,Z字手法拌均。
  • 3.加入四个蛋黄,Z字手法拌均备用。
  • 4.4个蛋清加入几滴柠檬汁,白砂糖可以一次性加入,低速打发糖化。打发细腻泡沫加入15克玉米淀粉,蛋白高速打发直立尖角即可。
  • 5.取三分一蛋白加入蛋黄糊中,上下翻拌均匀。蛋黄糊倒入剩下的蛋白中,上下翻拌均匀,不宜搅拌时间过长,容易消泡。
  • 6.面糊倒入模具【450克】中,中间挤适量黄油,撒适量杏仁片。
  • 7.烤箱提前预热,上下火150烘焙35分钟,温度仅供参考。
  • 8.熟了取出,震几下,倒扣放凉。
  • 9.组织绵软香甜可口。
  • 10.成品图。
