孜然山药豆
山药植物的叶腋间常生有肾形或卵圆形的珠芽,名“零余子”,俗称“山药豆”,有食补作用。

其作用与山药大致相同:补肺益气,健脾补虚,固肾益精,益心安神,强志增智,滋润血脉,宁嗽定喘,轻身延年。

山药豆即山药蔓上结的珠状芽,叶上生,长圆不一;皮黄色,煮熟后变灰色,皮薄,肉白质细。山药豆味甘、性平,入脾、肺、肾三经,可养肺益阴,补肾固精。

    Steps to make 孜然山药豆

    • 1.准备原料。
    • 2.青椒切小丁,葱 ,蒜切末。
    • 3.先炸熟花生米。油要稍微多些。
    • 4.花生米炸熟,盛出晾凉。原锅倒入洗净的山药豆,放入盐,盖盖炸山药豆。
    • 5.用筷子扎一粒最大的,能轻松扎透,看到山药豆表皮起皱就炸好了。
    • 6.倒入蒜末,葱末炒出香味。
    • 7.放入青椒丁,蚝油翻炒。
    • 8.倒入晾凉的花生米,撒少许白糖,孜然粉翻炒均匀即可。
