豌豆黄是北京传统小吃,按北京习俗,农历三月初三要吃豌豆黄。因此每当春季豌豆黄就上市,一直供应到春末。北京的豌豆黄分宫廷和民间两种。 这款豌豆黄是简易版的,不用煮豌豆,继续用豌豆粉做,效果和在北京吃过的一样。 想吃就要自己动手,自己做更健康。

Steps to make 老北京小吃--豌豆黄

  • 1.准备豌豆粉和细砂糖
  • 2.容器里放入100g豌豆粉和细砂糖,加入250g清水,搅拌均匀,搅成细细的面糊
  • 3.面糊过筛,滤出的面疙瘩用勺子碾碎,可以继续用;
  • 4.过滤后的面糊非常细滑
  • 5.小锅里放入余下的250g水,小火烧至锅底开始冒泡,倒入面糊,
  • 6.边到边搅,不停的搅
  • 7.不停的搅拌,一直成图中的样子,大约10几分钟
  • 8.倒入容器中,容器不用抹油
  • 9.表面最好是抹平,盖上细纱布,彻底放凉
  • 10.放凉后的豌豆粉倒扣在案板,切块装盘即可
