Steps to make 酒酿鸡腿#肉肉厨

  • 1.食材展示:鸡腿2个,姜1块,葱2根,玉米淀粉8克,酒酿汁100ml,八角2个,老抽5克,生抽15克,盐3克,油15ml。
  • 2.首先将鸡腿洗净切块备用。冰冻鸡肉需要飞水(去掉血水),再洗净备用。
  • 3.葱切葱花,姜切片备用。
  • 4.将鸡块放在一个大碗里,加入一半姜片,葱花,一半酒酿汁,一半生抽,一半盐,一个八角将鸡拌匀后腌制半个小时。
  • 5.腌制到25分钟的时候,把玉米淀粉加入腌制的鸡肉中搅拌均匀再继续腌制5分钟。
  • 6.起锅热油,加入姜片炒香。
  • 7.加入八角继续炒。
  • 8.再加入生抽和酒酿调制好酱汁。
  • 9.倒入腌制好的鸡肉,腌制的酱汁也一起倒入。
  • 10.搅拌均匀后盖上锅盖焖煮3分钟开盖。然后加入老抽调色。
  • 11.大火收汁即可出炉。焖煮期间不要加水,鸡肉从入锅开始10分钟即可出锅。要控制在10分钟把汁收完。这样的鸡肉才嫩滑多汁又入味。
