【茶籽油炖羊肉】--冬天的最佳美食补品
冬季已经到来很久了,相信大家都会想到羊肉来御寒。可是羊肉没有做好肯定是没有人下筷的,我对做羊肉还是不够好。不过胥同学做的就好吃,几乎没有羊膻味。羊肉是滋补和御寒的最佳滋补肉。

做羊肉的时候,调料的搭配作用也不可忽视。最好放一点不去皮的生姜,生姜皮辛凉,有散火除热,止痛祛风湿的作用,与羊肉同煮还能去除膻味。烹调羊肉时要放一些辣椒 大蒜 生姜 八角,用茶籽油来煮会清热哦。

在准备材料的时候我问胥同学需要什么他说不需要,我就准备了一些生姜和大蒜和辣椒,但是没有准备八角和老抽。后来在做的时候他就放它们了,有点被他忽悠的感觉。现在我知道为为什么每次做的味道不如他的好吃。

Steps to make 【茶籽油炖羊肉】--冬天的最佳美食补品

  • 1.材料:羊腿肉1300克 茶籽油半碗 辣椒180克 生姜一块(不要太小了) 大蒜1瓣 八角3颗 料酒半碗 生抽少许(半汤勺少点)、被胥同学忽悠了,所以主图就没有八角和生抽了。茶籽油和1块生姜都是他临时决定的所以看着好小的一块。
  • 2.坐锅上火倒入半碗的茶籽油,待油温到了60到70度的时候放入洗净切好的生姜和大蒜。
  • 3.胥同学自己在切洗净的羊肉,他觉得市场切得羊肉太大块了(我偷懒,在砍得时候我叫老板切小块的)
  • 4.待锅里有香味的时候在放入羊肉翻炒。
  • 5.胥同学在切洗净的朝天椒(之前问他需要切辣椒吗?.他说不要切。现在看来是他自己想动手了呵呵)
  • 6.待羊肉有些变色的时候倒出里面的油,在加入洗净的八角。
  • 7.倒入少许的生抽
  • 8.放入辣椒翻炒直到辣椒变色。
  • 9.再加入半碗料酒,接着倒入刚才倒出来的油汁,待汤汁开了以后倒入砂锅内煲上30分钟左右。、
  • 10.加入适量的盐。
  • 11.加入适量的鸡精,再焖上5到8分钟就可以出锅了。
