山药蒸武昌鱼
今天这道菜是老少咸宜的一道菜,口感鲜香滑嫩,而且作为年菜也是很应景,即符合了年年有余的中华习俗,又好吃好看。
    今天我做这个菜并不是做给孩子吃的,而是做给婆婆吃的。婆婆辛苦了几十年,把孩子们都拉扯大了,这个曾经勤劳能干的母亲,自己的身体却日渐虚弱。这段时间身体不好,我把她接来我家住,为了照顾好她,都快没时间发帖啦。她老人家胃不好,要少吃多餐,还得加强营养,于是最常给他做的就是鱼了。做给她的鱼要软嫩,还得好消化,有得有营养,也是想方设法的变花样。今天的这个清蒸武昌鱼,用山药垫底,就比较富含要求,老人就能适当的多吃点儿啦。我想无论是我们爱老人还是爱孩子,心情是一样的,有爱就有温暖,就有幸福!

Steps to make 山药蒸武昌鱼

  • 1.武昌鱼清洗干净。一定要鲜活的,清蒸才好吃。今天买的有点大了,其实500--600克的最好,今天买的这条750克,不能整个的蒸了
  • 2.切段后加入盐、姜、胡椒粉、黄酒腌制5分钟。
  • 3.山药去皮切斜片垫
  • 4.腌制好的鱼摆在山药上
  • 5.撒上些姜末
  • 6.上笼大火蒸10分钟。蒸好后不要打开再焖3分钟
  • 7.蒸好的鱼拿出来。撒上一下香葱碎即可上桌
