枣泥海绵纸杯蛋糕
前不久做了一大瓶枣泥,是不是挖点出来涂在吐司片上吃。想来也可以把它加到蛋糕里面。果然味道很不错,烘烤的时候满屋子枣泥的清香。一出炉就忍不住吃上两个。

Steps to make 枣泥海绵纸杯蛋糕

  • 1.利用泡芙花嘴给红枣去核。方法就是,花嘴尖端从红枣一头插入,之后慢慢旋转,从另一头出来,这样红枣核就能轻轻松松去掉啦。
  • 2.处理好的红枣倒入奶锅,加入水,水量大概和红枣齐平。
  • 3.中小火熬煮,一直煮到看不见水分,大约十几分钟即可。
  • 4.好的红枣倒入料理机中,把它打成细腻的枣泥。如果枣泥较湿,可以倒回奶锅翻炒一下。
  • 5.蛋黄蛋白分开,可借助分蛋器,蛋白放到无水无油干净的打蛋盆中。
  • 6.往蛋白中分3次加入细砂糖,打至干性发泡。(首先,用打蛋器低速将蛋白搅打至起鱼眼泡,加入1/3的细砂糖。接着,继续用电动打蛋器高速搅打,至蛋白体积膨胀1倍,再加入1/3的细砂糖。然后,继续用电动打蛋器中速搅打,稍微出现纹路,加入剩余的1/3的细砂糖。最后低速搅打,直至明显感到阻力,提起打蛋器时尖端是短而小的尖峰即可。)
  • 7.加入蛋黄,用电动打蛋器一档速度,将蛋黄蛋白搅打均匀,直到打蛋器划过之后能留下痕迹。
  • 8.筛入低筋面粉,用手动打蛋器翻拌均匀。
  • 9.色拉油倒在在面糊表面,记得分散一些,继续用手动打蛋器翻拌均匀。
  • 10.将牛奶倒入面糊中,用手动打蛋器快速翻拌均匀。
  • 11.加入枣泥,同样翻拌均匀。翻拌好的面糊是非常细腻光滑的。
  • 12.将纸杯套在学厨6连纸杯蛋糕模上,面糊装进裱花袋。
  • 13.将面糊挤入模具,约8分满,挤好之后将模具轻轻的震一下,震出气泡,再撒上黑芝麻。
  • 14.送入预热好的烤箱,上下火160摄氏度,中层,烤28分钟。
  • 15.烤好的蛋糕脱模之后放在烤网上晾凉。
  • 16.敲好吃,又健康的枣泥蛋糕。
