Steps to make 葡萄干吐司(厨师机版)

  • 1.将除黄油和葡萄干外的其他材料,按照先液体后粉类的顺序放入搅拌桶
  • 2.厨师机一档(最慢速)钩型头搅拌10分钟,然后加入切成小块的黄油
  • 3.继续一档运行7-8分钟,然后提升至二档,揉面团至完全阶段(5分钟左右)
  • 4.撕一小块,检查面团筋度,可以拉出手套膜
  • 5.加入葡萄干,揉进面团中
  • 6.放回桶中盖潮湿的布发酵
  • 7.发至2-2.5倍大,手指蘸面粉戳一个小洞,不回缩不塌陷即可
  • 8.取出面团,排气后分成三份并滚圆,盖潮湿的布静置15分钟
  • 9.取一份用擀面杖擀成椭圆,翻面后卷起
  • 10.放入吐司盒中.一次做好三个面团
  • 11.盖湿布温暖处发酵至8-9分满,表面刷蛋液.预热烤箱180度,中层上下火,烤35分钟.表面上色后要及时加盖锡纸.
