【湖南】左宗棠鸡
左宗棠鸡,也称为左公鸡。由彭长贵创制,托名左宗棠,其实与清末将领左宗棠没有直接关系。
「左宗棠鸡」源于一九五〇年美国第七舰队司令雷德福(Redford)访台时,他负责掌厨,用腌渍的去骨鸡腿肉,下锅油炸到「外脆内软」,并以酱油、醋、辣椒等调味料拌炒均匀,最后勾芡并淋上麻油做成这道料理,吃起来外脆内嫩,口味带有湖南料理的辛辣,并以湖南知名将军左宗棠为名。

Steps to make 【湖南】左宗棠鸡

  • 1.准备食材
  • 2.姜蒜剁末,葱切葱花、干辣椒切段
  • 3.鸡腿去骨,将肉切成块状
  • 4.先用蛋黄,盐将鸡块抓匀
  • 5.锅内油烧热后,再加入淀粉抓匀
  • 6.待锅内油烧热,放入鸡块大火炸。一边炸一边翻动,直至炸至酥脆,表面金黄捞出沥油备用
  • 7.将生抽、淀粉、白醋、白糖、水、辣椒油、葱花放入碗内调匀备用
  • 8.锅内放少许油,放入姜蒜末、干辣椒爆香
  • 9.放入调味汁,烧沸
  • 10.放入炸好的鸡块,迅速翻炒至鸡块均匀裹上调味料即可出锅
