凉拌鸡丝

  • 生抽2勺
  • 香醋2勺
  • 料酒1勺
  • 蚝油1勺

Steps to make 凉拌鸡丝

  • 1.准备三个鸡腿。也可以用鸡胸肉,但我个人觉得鸡腿肉更嫩。
  • 2.清水下锅,倒1勺料酒,三个八角,几片生姜,一个葱结,焯水煮熟。鸡肉容易熟,用筷子插一下,能扎透又没有血水就是熟了。
  • 3.煮好的鸡腿。
  • 4.把鸡腿捞出来过凉水,放在冰水中浸泡10分钟。
  • 5.把鸡腿捞出来,用手撕成条。胡萝卜切丝,蒜头剁碎,葱切碎。
  • 6.把蒜末,葱花装入小碗中,倒1勺白芝麻,1勺辣椒面。
  • 7.淋上滚烫的热油,搅拌均匀。倒2勺生抽,2勺香醋,1勺蚝油搅拌均匀。
  • 8.把调好的凉拌汁倒入鸡丝配菜中,戴上手套,抓拌均匀。
  • 9.成品。香辣开胃,美味又简单。
