松仁玉米月饼
最初因为认识一个糕点师,他给我了几款经典的月饼的配方,像广式五仁,豆沙等。因得到了老师的指导,我家的月饼做的还是可以的,呵呵,小小的自夸一下啦,我也年年都是自己动手做很多月饼送亲朋好友,广受欢迎啊。今年因为家里有个小宝宝,没有太多的时间,所以到现在才开始动手做月饼。今天的这款月饼馅料,算是我个人根据自己多年做月饼馅料的经验自己研发的,用把经典菜式用到了月饼上,经过3次改良,最终确定这个配方,我们全家一致认为好吃,所以配方最终确定后立即拿出来和大家分享,喜欢的亲们,给你家的月饼也加一个新配方吧。

  • 熟玉米粒300
  • 冰糖30克
  • 松仁45g
  • 150g
  • 黄油50g
  • 面粉100g
  • 转化糖浆75g
  • 花生油25g
  • 枧水1g

Steps to make 松仁玉米月饼

  • 1.新鲜玉米煮熟剥下玉米粒
  • 2.把玉米粒加水放入破壁机中
  • 3.用酱料功能,打成玉米糊
  • 4.冰糖用研磨功能打成粉
  • 5.把玉米糊倒入锅中中小火炒至较干的状态后加入冰糖粉继续翻炒
  • 6.加入黄油继续中小火翻炒
  • 7.一直炒到馅料基本成团,而且比较油润的状态就可以了。离火晾凉备用
  • 8.松仁小火炒熟晾凉
  • 9.把晾凉的玉米团放入松仁
  • 10.拌均匀即可
  • 11.转化糖浆、油、枧水一起倒入盆里
  • 12.充分搅拌至完全融合
  • 13.筛入面粉
  • 14.和成面团
  • 15.把炒好的馅料分成46的剂子。我同时做了几个巧克力面皮的,但因感觉巧克力皮较硬,就不和大家分享了。
  • 16.面皮分成14克的剂子。取一个面剂包裹馅料,均匀的包严实。面皮的量我做的稍微多了点,可以做13个左右,我同时做了几个枣泥的。亲可以根据自己的用量适当等比例调整。
  • 17.包好的月饼入模成型。巧克力面团的也包好。表面喷水放置烤的 时候开裂。
  • 18.烤箱200度预热好之后,入烤箱烤
  • 19.鸡蛋打散后最好是过筛,这样更均匀
  • 20.烤5--7分钟的时候拿出来表面刷蛋液
  • 21.然后继续200度再烤15分钟
  • 22.烤好的月饼
  • 23.切开看看,玉米和松仁的搭配,让这款月饼有小清新的感觉,嚼到松仁时是清甜中透香,很好吃的一款哦
