【苏菜】话梅卤汁豆腐干

  • 生抽2汤匙
  • 红烧汁1汤匙
  • 冰糖5-8粒

Steps to make 【苏菜】话梅卤汁豆腐干

  • 1.白豆腐干用水洗干净,控干水分。
  • 2.准备好香叶、八角、桂皮、茴香和话梅。
  • 3.用刀将豆腐干对半切成小方块,炒锅让入适量油烧至八成热,放入豆腐干煎炸。
  • 4.待表面起泡、边缘变成金黄色时即可翻面再煎。
  • 5.煎好的豆腐干起锅控去油分,备用。
  • 6.原锅留少许油,放入1大勺红烧汁(或老抽也可以)、2大勺生抽、冰糖,大火烧开。
  • 7.倒入煎好的豆腐干,翻炒,让汤汁均匀裹在豆腐干上。
  • 8.倒入适量清水没过豆腐干,再将第二步中的配料放入,大火烧开转小火煮1个小时左右。
  • 9.一个小时以后汤汁开始变浓稠,转大火收汁。
  • 10.顺着一个方向慢慢搅动,直至汤汁收干、均匀裹在豆腐干上即可。
