汽锅鸡(天麻汽锅鸡)——云南的特色菜
汽锅鸡,有补虚养身、补血、健脾开胃的功效。天麻鸡也有平肝息风,养血安神的功效,对头痛、失眠等症有良好的效用。
融入天麻味道的乌鸡汤,浓浓的香味,又有滋补的作用,是极好的药膳。
也是冬日进补中温补的药膳之一。

Steps to make 汽锅鸡(天麻汽锅鸡)——云南的特色菜

  • 1.先用清水把鸡肉泡两小时左右,
  • 2.把天麻切块,姜切丝(我这是新鲜天麻,而且比较多,所以切块了,如果用干天麻的话,先泡水后切片,能更入味,汤的味更好)
  • 3.把天麻,鸡块,姜丝,八角,少许盐拌均匀后,放入汽锅内。加清水,刚刚没过鸡肉就好,
  • 4.盖上盖,在锅内放上铁架,架上汽锅,
  • 5.盖上盖子大火开后转小火焖一个半小时,
  • 6.起锅,散上几粒枸杞,盖上盖子再焖几分钟,
  • 7.大概三四分钟就好,
  • 8.浓浓的香味扑鼻而来,先喝汤,后吃料,才更好,
