黑米糕
家里买了1斤黑米粉,在网上搜了个黑米糕的方子,做了一下改良。做出来的黑米糕很好吃,比较松软,奶香味十足。

  • 牛奶230克
  • 糖粉50克
  • 面粉20克
  • 泡打粉2克
  • 鸡蛋3个
  • 柠檬汁数滴

Steps to make 黑米糕

  • 1.把黑米粉、面粉和糯米粉混合均匀
  • 2.倒入牛奶搅拌均匀(泡打粉在加入打发的蛋白霜之前添加)
  • 3.鸡蛋分离蛋白和蛋黄,蛋黄不用,蛋清中加数滴柠檬汁,然后放入冰箱冷冻室,冷冻5分钟左右,再进行下一步的打发蛋清。
  • 4.将自制脱模膏涂抹于用来蒸制黑米粉的容器中,这样黑米糕蒸制完成以后,可以轻松脱膜,成品不会坑坑洼洼
  • 5.打发蛋白至干性发泡,打发时糖粉分次加入。将1/3的蛋白霜加入步骤1的牛奶糊里,轻轻拌匀,再加1/3的蛋白霜,轻轻拌匀,然后把拌好的蛋糕糊倒到剩余的蛋白霜里。
  • 6.将搅拌好的蛋糕糊倒入涂好脱模膏的容器中
  • 7.冷水上锅蒸25分钟。
