莲蓉蛋黄月饼
虽然是第一次做月饼,但是因为有制作蛋黄酥这类食物的经验,月饼做起来倒也是不难的,配比正确,烤制时间主要,基本上新手也是完全可以成功的。

做好没有等待回油,我就拍了照,因为想着要打包好后送家人和朋友们,又接近天黑,光线不是很好,所以看着卖相不怎样,但是味道却很不错。

  • 枧水5g
  • 转化糖浆226g
  • 玉米油76g
  • 莲蓉馅料980g
  • 咸蛋黄20个
  • 蛋液少许

Steps to make 莲蓉蛋黄月饼

  • 1.准备材料
  • 2.枧水和糖浆混合搅拌均匀、分次加入玉米油
  • 3.拌匀
  • 4.筛入月饼粉,用刮刀拌匀
  • 5.用保鲜膜包好松弛一个小时
  • 6.蛋黄对半切后淋少许高度白酒
  • 7.烤箱150度10分钟
  • 8.馅料和蛋黄称重35克后将馅料搓圆

  • 10.松弛好的饼皮分成15克大小,搓圆
  • 11.包入馅料滚圆
  • 12.包入蛋黄莲蓉馅,用往上推的方式包好
  • 13.薄薄滴滚一层粉
  • 14.放入月饼模具中压实后按压下就做好月饼胚了
  • 15.表面喷水
  • 16.放入预热好的烤箱200度5分钟
  • 17.取出表面刷蛋液(薄薄就好)
  • 18.重新入烤箱180度15分钟左右,放凉后保存静置2天左右回油后食用
