翡翠白玉羹
年轻时代去了几年北方,才让我知道自己对面食是那么的情有独钟。今天的吃法,按照某些同志说的就是“猪食”。而对于我来说,这样的一锅出就是绝对的美味。翡翠白玉羹,美妙的名字,其实就是一碗面疙瘩汤。以前做的都不地道,因为那一片片面花倒我锅里成不了好看的疙瘩,只能加水胡乱搅成硬糊,用筷子掐下来的一个个大疙瘩。今天偷师一招,借用漏勺,终于让我做出了一碗均匀的面疙瘩汤。

  • 鸡蛋一个
  • 菠菜三颗
  • 西红柿一个

Steps to make 翡翠白玉羹

  • 1.西红柿开水烫一下,去皮
  • 2.菠菜清洗干净切碎,西红柿切丁
  • 3.鸡胸肉切片,料酒加水煮开焯熟
  • 4.撕成均匀鸡丝
  • 5.面粉加入一个鸡蛋的蛋清,加少许盐,蛋黄留后用
  • 6.加适量清水,打成面糊,以提起筷子面糊会往下掉为准
  • 7.热油,倒入西红柿翻炒
  • 8.待西红柿炒出汁水后,倒入适量清水煮开
  • 9.把面糊倒在下面漏勺里,上面用勺子轻轻压制,面糊就会从漏勺小眼里往锅里掉
  • 10.面糊掉锅里,成形为疙瘩后,倒入鸡丝
  • 11.倒入打匀的蛋黄液
  • 12.加盐调味
  • 13.撒入菠菜,均匀翻拌几下,就可以出锅享用了
