大米粉蒸蛋糕
这是一款自配方蛋糕,制作了N次无一失败,成品蛋糕组织细腻,柔软膨松、米香味浓、不油腻、入口即化、可做为早餐、下午茶食用。

Steps to make 大米粉蒸蛋糕

  • 1.先将蛋黄与蛋白分离在两个无水无油的容器中。
  • 2.分离出的蛋白。
  • 3.将蛋黄打散,加入10白糖、3g盐,及牛奶。
  • 4.搅打均匀后再加入食用油搅打均匀。
  • 5.加入过筛的大米粉与低粉搅拌均匀。
  • 6.蛋白中分3次加入白糖/每次加20g搅打。
  • 7.笫二次加入白糖继续搅打。
  • 8.最后一次加入白糖继续搅打,再加入几滴白醋继续搅打。
  • 9.蛋白糊制作完成。
  • 10.加入1/2的蛋白(每次都分3次加入蛋白糊),这个碗有些小,只能分两次加入蛋白翻拌均匀。
  • 11.翻拌均匀后,再倒入蛋白糖中。
  • 12.继续翻拌均匀。
  • 13.蛋糕糊制作完成。
  • 14.将蛋糕糊倒入模具中,震几下去汽泡,覆膜防水滴入。
  • 15.先将水烧开,再放入模具蒸45分钟。
  • 16.蛋糕蒸好再焖3至5分钟打开锅盖,取出蛋糕模具。
  • 17.晾凉后将蛋糕脱模(脱模非常完整),切开后组织细腻、柔软膨松、口感入口即化。
