冰皮月饼
中秋节来临之际,自己也在家做了一道冰皮月饼,冰皮月饼这些年越来越受欢迎了,口味有很多种,且不会像传统的月饼需要烘烤,这道冰皮月饼材料制作方法都很简单,材料也比较容易买到,自己制作经济实惠,且健康。

  • 粘米粉50g
  • 糯米粉50g
  • 澄粉30g
  • 炼奶30g
  • 玉米油30g
  • 糖粉50g
  • 纯牛奶230g
  • 甘粟仁100g
  • 奶粉80g
  • 澄粉40g
  • 鸡蛋4个
  • 细砂糖65g
  • 无盐黄油100g

Steps to make 冰皮月饼

  • 1.准备好做月饼皮的材料
  • 2.把冰皮月饼中的糯米粉,粘米粉,澄粉,糖粉全部过筛倒入大碗中
  • 3.加入纯牛奶,用手动打蛋器使其混匀
  • 4.再加入玉米油
  • 5.加入炼奶
  • 6.混合均匀后倒入蒸碗中
  • 7.把冰皮面糊放入已经烧沸腾的水中大火蒸25分钟,蒸之前可以盖上保鲜膜,否则会因为面糊水分太多,导致太粘
  • 8.面糊出锅后要用筷子搓散它,放一旁冷却
  • 9.面糊不烫手后带上防粘手套揉至面团光滑,放一旁待用
  • 10.接下来做奶黄馅
  • 11.无盐黄油室温软化好,然后用打蛋器打至顺滑;
  • 12.一次性加入细砂糖,然后用打蛋器拌匀;
  • 13.四个鸡蛋分4次加入无盐黄油里面,每次加入鸡蛋都要充分跟黄油混匀;
  • 14.混合均匀之后把奶粉和澄粉全部倒进去
  • 15.用手动的打蛋器混合均匀,直到看不见粉类跟颗粒
  • 16.把奶黄糊放入烧开的热水中隔水搅拌均匀,完全混合均匀之后盖上锅盖蒸5分钟
  • 17.奶黄糊盖上锅盖每隔5分钟拌匀一下,蒸10分钟后,一直翻拌,让奶黄糊混合均匀
  • 18.等到面糊全部都凝固了,没有液体就代表熟了
  • 19.把栗子切成丁
  • 20.倒入奶黄馅中混合均匀
  • 21.馅料和皮的比例1:1,分别都是25g每份;
  • 22.像包子一样把馅料包进去,封好口;
  • 23.用月饼模具压出形状即可
