【炒面类】温州炒粉干
这些粉干是中秋那天老妈寄给我的,整整一大箱子呢,很喜欢吃自己家乡的粉干,上海这里好像都看不到。这炒面也是老妈最拿手的,很好吃,面条很筋道,我什么时候才能学会老妈那手艺啊!

    Steps to make 【炒面类】温州炒粉干

    • 1.这是家乡的粉干。(大家也可以换成其他的面条)
    • 2.香菇和胡萝卜洗净后各切细丝备用。
    • 3.切好蒜片,小青菜洗净。
    • 4.鸡蛋两个搅拌好。
    • 5.粉干用开水微微烫软即可。(不能烫熟,用手一掐感觉面条中间微微有硬即可)
    • 6.锅里倒油加热后,把鸡蛋煎好后,搅拌成块状乘出。
    • 7.锅内留余油把胡萝卜丝放入煸下,然后把香菇也一起煸香乘出。
    • 8.锅内重新倒少许油,把蒜片煸香后,把小青菜放入炒软即可乘出。
    • 9.把面条沥干水分放入翻炒。
    • 10.加入盐半勺,白糖半勺,料酒1勺,左手拿铲子右手拿筷子,大火,快速翻炒均匀。
    • 11.最后把炒好的蔬菜一起放入,加少许鸡精炒匀即可。
    • 12.这就是苽苽家乡温州的炒粉干,大家做的时候也可以加点肉丝进去,只是早上时间来不急,就没放肉丝,可还是一样好吃滴。
