红烧大黄鱼

Steps to make 红烧大黄鱼

  • 1.准备好原料。
  • 2.把鱼打上刀花,均匀地抹上盐,盐十五分钟。
  • 3.把葱一部分切碎,还有的葱留有三寸长,蒜切成厚片,姜切成片。
  • 4.锅烧热,入油,放姜片。
  • 5.把鱼放入锅中煎。
  • 6.煎完两面后,先放蒜、辣椒炸香,再放葱炸香。
  • 7.锅中放入高汤。
  • 8.加入老抽、料酒、糖、蚝油、番茄酱。
  • 9.烧时把汤汁用勺子在鱼身上浇一浇。盖上盖子烧一会儿。
  • 10.准备好水淀粉。
  • 11.待锅中汤汁不多时。捡去锅中的葱,加入胡椒粉,加入水淀粉勾薄芡再用勺子把鱼浇浇,最后要出锅时放入一勺香醋。
  • 12.出盘时撒上葱花。
