腌笃鲜
腌笃鲜,属于江南吴越特色菜肴,现已是上海本帮菜,苏帮菜,杭帮菜中具有代表性的菜色之一。此菜口味咸鲜,汤白汁浓,肉质酥肥,笋清香脆嫩,鲜味浓厚。主要是春笋和鲜、咸五花肉片一起煮的汤。“腌”,就是指腌制过的咸肉;“鲜“,就是新鲜的肉类(鸡、蹄髈、小排骨等);“笃”,就是用小火焖的意思。

Steps to make 腌笃鲜

  • 1.春笋切好块绰水备用
  • 2.把猪蹄绰水
  • 3.捞出用清水洗净
  • 4.咸肉用温水洗净
  • 5.把猪蹄、咸肉都放入电饭煲里
  • 6.加入姜片、适量清水和料酒
  • 7.用煲汤程序炖煮2小时
  • 8.时间过半,放入春笋
  • 9.继续炖煮至猪蹄酥烂,尝一下味道看是否需要加盐
