Steps to make 爽口粘手的【马蒂烧猪脚】

  • 1.猪脚一个,钢钎烧红将猪毛烙尽。猪脚放入水中泡20分钟,用硬刷把将焦色刷尽。
  • 2.先用片刀分开猪脚,用砍刀劈开猪脚,将猪脚斩成大块装入碗中,加适量的盐抓均后腌制30分钟。
  • 3.去皮荸荠适量;
  • 4.八角、桂皮、肉蔻、白芷、香叶、辣椒各适量;
  • 5.锅烧热去适量的油,倒入猪脚煸炒。要想将猪脚炒透,要多次加少量的水煸炒。
  • 6.猪脚炒透后加入适量冰糖,倒入所有香料,加适量的水煸炒,使冰糖融化,香料炒熟。冰糖完全溶解后会粘在锅边,沿锅边去水并沿锅边翻炒,将糖炒回锅中,直到炒出搪色;再加入适量老抽翻炒均匀。
  • 7.一次性向锅中加足水后加入适量姜片,盖上锅盖大火煮开(炒到位的猪脚随着水开,浮沫会越来越少)。煮时出现大量浮沫,是因腌制或炒时方法不对。
  • 8.浮沫完全没有后加两勺米酒酿,倒入马蹄,大火重新烧开后转小火煨1.5小时。
  • 9.1.5小时后汤汁浓厚,大火继续收汁。汤汁快干时倒入大蒜叶和适量鸡精翻炒均匀,美味即成。
